  • 1 pound 450g of pasta (any shape you like)
  • 2 tablespoons of butter
  • 2 tablespoons of olive oil
  • 2 cloves of garlic chopped small
  • ¼ cup 60ml of heavy cream
  • ¼ cup 25g of grated Parmesan cheese
  • 1 tablespoon of truffle oil this is the star ingredient that gives the truffle flavor!
  • Salt and pepper to taste
  • handful of shaved truffle, chopped Fresh parsley optional

Instructions
 

Preparing the Pasta

  • Fill a big pot with water. Add some salt.
  • Bring it to a boil.
  • Add the pasta and cook it until it’s soft but still a bit firm. This is called “al dente.” We are using fettuccine pasta for this recipe.

Making the Sauce

  • While the pasta is cooking, melt the butter and olive oil in a big pan over medium heat.
  • Add the chopped garlic and cook it until it smells good (about 1 minute).
  • Pour in the heavy cream and let it bubble gently for 2-3 minutes.
  • Add the Parmesan cheese and stir until it melts.

Combining and Finishing

  • When the pasta is done, save 1/2 cup of the pasta water before you drain it.
  • Add the cooked pasta to the pan with the sauce.
  • Pour in the truffle oil.If you have shaved truffle add it now for extra flavor. Mix everything well.
  • If the sauce is too thick, add a little of the pasta water you saved.
  • Put the pasta on plates. Sprinkle some extra Parmesan cheese on top if you want.
  • Add some chopped parsley for color.

  • If you can’t find truffle oil, you can use mushroom-flavored olive oil instead.
  • You can use any kind of pasta you like. Spaghetti, fettuccine, or penne all work great!
